Erythritol is widely found in nature, such as fungi such as mushrooms and lichens, melons, grapes, and pears, and can also be detected in small amounts in animal eye lenses, plasma, fetal fluid, semen, and urine. It also exists in small amounts in fermented foods such as wine, beer, soy sauce, and Japanese sake. It can be obtained by fermenting glucose.
