Food grade magnesium chloride is also known as hydrochlorite, chemical formula MgCl2·6H2O, molecular weight: 203. White crystals, columnar or needle-shaped, bitter. Easily soluble in water and ethanol, easy to deliquesce when humidity is high. Hot melt decomposition at 116~118℃. Magnesium chloride, also known as brine flakes and bittern, is made from hydrochlorite or directly from salt mother liquor. Edible magnesium chloride can be used as a food additive in the production of bean products as a stabilizer or coagulant. A small amount of consumption is harmless to the human body.
