PRODUCT DESCRIPTION
Gluconolactone (GDL) is an organic compound with the chemical formula C6H10O6. It is obtained by oxidizing glucose to gluconic acid or its salts, and then purifying, desalting, decolorizing and concentrating. It is used as a coagulant, stabilizer, acidulant, preservative and preservative in the food industry. It is a multifunctional food additive.
PRODUCT USAGE
Tofu Coagulant
GDL is used as a protein coagulant to produce tofu. The tofu is white and tender, without the bitter taste of brine or gypsum, without protein loss, high tofu yield, and easy to use.
Milk Gelling Agent
It is mainly used to produce yogurt or cheese. In industrial use, the gel strength of milk acidified by GDL is about twice that of the fermented type. Its dosage is 0.025% to 1.5% in milk to make the product reach the required coagulation pH. When 3% is added and kept warm at 30°C, the milk gel produced has a similar structure to the gel produced by lactic acid fermentation.
Quality Improver
Using GDL in luncheon meat and minced pork canned food can increase the effect of coloring agent, thereby reducing the dosage of nitrite, which is more toxic. At the same time, GDL also has emulsifying and antiseptic effects, thereby improving the quality of minced meat canned food. The maximum dosage is 0.3%.
Acidifier
GDL can be added to sweet fruit juices and jellies such as vanilla extract, chocolate, and banana. It is the main acidic substance in compound leavening agents, which can slowly produce carbonic acid gas and can produce unique pastries.
Others
In addition, GDL can also be used as a chelating agent in the dairy industry and the beer industry to prevent the formation of milkstone and tartar; as a protein flocculant, it is used in the treatment of industrial wastewater containing protein; and as a leavening agent, it is also widely used.
